Thanksgiving is right around the corner. In my previous post I gave you some options for gluten free stuffing. Other than stuffing, what do you think of when you think Thanksgiving? Dessert! I’ve put together a collection of gluten free Thanksgiving desserts that everyone will love.
My family loves banana pudding. It’s sweet, creamy and all you have to do is swap out the vanilla wafers for a gluten free version. And, it’s super easy to whip it up.
Here’s what you need:
1 – 5 oz box vanilla instant pudding
2 cups cold milk
1 – 14oz sweetened condensed milk
1 TBS vanilla extract
1 container cool whip
2 boxes gluten free vanilla wafers
9 or 10 sliced bananas
Lemon Juice
Here’s what you do:
I start by slicing the bananas and putting them in a bowl with lemon juice to prevent them from browning. Then, in a large mixing bowl, beat the vanilla pudding and milk until it starts to thicken, about 2 minutes. Stir in the sweetened condensed milk and vanilla extract. Next, fold in the cool whip. Grab a large glass bowl or you can use a 13×9 baking dish. I like using a glass bowl, it looks nice. Now, layer the ingredients; pudding, wafers and banana’s. That’s it! Put it in the fridge and chill until ready to serve.
