COOKIES COOKIES and more COOKIES
Well, it’s that time of year! Christmas is going to be here before we know it. I don’t know about you, but I haven’t done anything yet! No tree, no gifts purchased, no cookies made…. That will all change this weekend. We’re going to get our tree on Sunday. Once the tree is up and the lights are twinkling, I’ll get into the groove.
Gluten free baking sure has come a long way since Samantha was diagnosed 15 years ago. In fact, gluten free everything has come a long way.
I’ve put together a collection of 15 gluten free Christmas cookie recipes sure to satisfy your sweet tooth. When you’re doing your holiday baking this year, keep something in mind. Whether you’ve been gluten free for a while or just getting started on a gluten free diet, things really have come a long way. And by that I mean, the quality of gluten free products. You can literally take any cookie recipe and just simply replace the flour with a good quality cup for cup gluten free flour blend. That’s what I’ve been doing for years. There’s several good flour blends out there. Better Batter, King Arthurs and lately I’ve been using Cup 4 Cup. I’ll admit, I’m not a huge fan of gluten free food that “taste” gluten free, if you know what I mean! That’s why with gluten free baking, the quality of the flour blend really is key. With that being said, gluten free baked goods are always going to be a little more crumbly than their gluten counterparts, but the taste will be spot on!
