Mandarin Orange Pineapple Cake

Here’s what you need:

CAKE:

3 eggs

3/4 cup oil

1 – 11 ounce can mandarin oranges (keep the juice)

1 box gluten free yellow cake mix (I use Betty Crocker Gluten Free yellow cake mix)

*Mix the above ingredients together and bake at 350 for 30-35 minutes

TOPPING:

1 – 8 ounce container of cool whip

1 tsp vanilla extract

1 – 3.4 ounce package vanilla instant pudding

1 – 20 ounce can crushed pineapple

*Once the cake is completely cooled – mix the above ingredients together and put on cooled cake.
