These peanut sauce noodles are creamy, savory, and packed with bold Asian-inspired flavors. Tossed in a silky peanut-lime sauce with a hint of spice, this quick gluten-free noodle dish is perfect for an easy weeknight dinner or a satisfying lunch.

Ingredients

  • 12 oz gluten free fettuccine or spaghetti noodles

  • 1/3 cup smooth peanut butter

  • 1/3 cup gluten free reduced-Tamari, or soy sauce.

  • 12 Tablespoon sugar of choice. (brown sugar, white sugar, coconut sugar, ect..)

  • 3 teaspoons sesame oil

  • 1/2 teaspoon Siracha chili sauce

  • 3/4 teaspoon ground ginger

  • 1 small clove garlic, pressed or minced

  • The juice of 1 lime

  • 1 bunch of green onions, chopped and separate the white part from the green part

  • 4 Tablespoons roasted peanuts, roughly chopped

  • 1 cup reserved pasta water

Instructions

  • Bring a large pot of water to a boil then add gluten free pasta and cook until al dente.
    BEFORE DRAINING, carefully scoop out 1 cup pasta water and set aside. Drain pasta then return to pot.
  • In a small bowl combine peanut butter, gluten free Tamari or soy sauce, sugar, sesame oil, Siracha chili sauce, ginger, garlic, and a squeeze of fresh lime juice. Don’t worry if it isn’t completely smooth.
  • Add sauce, white part of green onions, and chopped peanuts to the hot pasta, plus a few Tablespoons of the
    reserved pasta water, then stir until noodles are coated and the sauce is completely smooth. Add more pasta water as needed to reach a smooth consistency.

Notes


  • Reserve the pasta water before draining — it’s key for creating a smooth, glossy sauce that clings to the noodles.
    Adjust the sweetness or spice level by adding more or less sugar or Sriracha to taste.
    This dish is best served immediately, but leftovers can be reheated gently with a splash of water to loosen the sauce.
