About GlutenFreeSami

Welcome to GlutenFreeSami, a place born from one family’s gluten-free journey and a desire to make living with Celiac disease a little easier.

Our story began in 2002, when my daughter, Samantha, was diagnosed with Celiac disease at just seven years old. Like many people at the time, I had never even heard of gluten. Overnight, simple grocery trips turned into hours of reading ingredient labels, and baking became much more challenging than I ever imagined.

There was no shortcut, no easy guide, and certainly no dedicated gluten-free aisle at the store. Instead, there was a lot of trial and error—and more than a few recipes that never made it to the dinner table.

In those early years, gluten-free cooking often felt frustrating and overwhelming. Many recipes called for ingredients that were difficult to find or ended with disappointing results that nobody wanted to eat twice.

So I kept experimenting. I adjusted recipes, tested new ingredients, and learned through experience what actually works in a real kitchen for real families who simply want delicious food they can trust.

Over time, living gluten-free stopped feeling impossible and became a normal part of everyday life.

That experience inspired me to create GlutenFreeSami—a place for people who cook gluten-free because they have to, not because it’s the latest trend. Every recipe shared here is one I would happily serve in my own home, created with the goal of making gluten-free meals simple, reliable, and enjoyable.

The name GlutenFreeSami is a tribute to my daughter, Samantha, whose diagnosis started this entire journey. What began out of necessity slowly grew into confidence and eventually into a community where I could share recipes, tips, and encouragement with others navigating the same path.

Celiac Disease is an autoimmune disorder. When someone with Celiac Disease eats gluten — a protein found in wheat, barley, and rye — the body treats it like an enemy. The immune system attacks the small intestine, damaging it over time and making it hard to absorb nutrients.

Gluten-free food wasn’t easy to find back then. There were no “free-from” aisles in grocery stores. No gluten-free menus at restaurants. The few foods I could find had to be mail-ordered, and they were expensive, dense, crumbly, or tasteless — sometimes all three.

The learning curve was steep, and the fear of making a mistake was constant.
But we learned. We adapted. And slowly, we built a gluten-free home that felt safe again.
