Learning gluten-free cooking one test at a time
Cooking without wheat flour changed how I think about every ingredient. Dough behaves differently, cakes set differently, and a recipe that sounds simple can fail for reasons nobody explained. I started keeping notes on what worked, what didn't, and why.
Those notes became the foundation of this blog. I still test each recipe several times in a standard home oven, because the results that matter are the ones you can reproduce on an ordinary Tuesday.
