Soft and naturally sweet, these easy no-bake energy bites are made with peanut butter, oats, flaxseed and mini chocolate chips.

Ingredients

  • 1 cup peanut butter (creamy or crunchy)

  • 2/3 cup gluten-free rolled oats

  • 1/3 cup honey

  • 1/4 cup ground flaxseed

  • 1/3 cup mini chocolate chips

  • 1 teaspoon vanilla extract

Directions

  • Mix the base
    In a medium bowl, stir together the peanut butter, honey and vanilla until smooth.
  • Add dry ingredients
    Mix in the oats, ground flaxseed, and chocolate chips until fully combined.
  • Chill
    Refrigerate the mixture for 15–20 minutes to make it easier to roll.
  • Roll into bites
    Scoop and roll into 1-inch balls using your hands.
  • Store
    Store in an airtight container in the refrigerator.

Notes

  • Recipe Notes
    Use certified gluten-free oats
    If the mixture is too sticky, add 1–2 tablespoons more oats
    If too dry, add a drizzle of honey or peanut butter
