1 lb lean ground beef
1 large shallot or 1/2 small onion, chopped
1 package taco seasoning – store bought or homemade
1/2 cup salsa
1-3/4 cups chicken broth
1 cup white rice
1 cup shredded sharp cheddar cheese
Directions
- Heat a large skillet over medium-high heat. Add the ground beef and onion. Brown the beef until cooked through. Use a paper towel to soak up excess grease or drain in a colander and return the mixture to the skillet. Add the taco seasoning, salsa, and chicken broth. Stir to combine and bring the mixture to a boil.
- Once boiling, stir in the rice and place a lid on top of the skillet and reduce the heat to low.
