These easy gluten-free egg bites are fluffy, protein-packed, and perfect for meal prep. Made in a muffin tin with simple ingredients and ready in under 30 minutes.

Ingredients

  • 8 large eggs

  • ¼ cup milk (dairy or unsweetened almond milk)

  • ½ cup shredded cheddar cheese

  • ½ cup finely chopped spinach

  • ¼ cup diced bell pepper

  • ¼ teaspoon salt

  • ¼ teaspoon black pepper

  • Optional add-ins:
  • Cooked bacon or turkey sausage

  • Feta cheese

  • Green onions

Directions

  • Preheat oven to 350°F.
  • Grease a 12-cup muffin tin very well (or use silicone liners).
  • In a large bowl, whisk together eggs and milk until smooth.
