OUR STORY

GlutenFreeSami started in 2002, when my daughter Samantha was diagnosed with celiac disease at just seven years old.

Like most people back then, I had no idea what gluten was. I did know that late night grocery shopping turned into label-reading marathons and baking became a lot more complicated than it used to be.

There was no shortcut, no magic list, and definitely no helpful gluten-free aisle. Just a lot of trial and error — and more than a few meals that didn’t make it to the table.

In the early years, gluten-free cooking felt frustrating and unnecessarily complicated. Most recipes either used hard-to-find ingredients or produced food that was… let’s just say…. we won’t be having that again.

So I started testing. Adjusting. Retesting. Learning what actually works in a real kitchen with real people who just want dinner to taste normal again.

Over time, gluten-free stopped feeling impossible — and started feeling manageable.

GlutenFreeSami is for anyone cooking gluten-free because they have to, not because it’s trendy.

These are the recipes I rely on in my own home — the ones I know will work without turning dinner into a science experiment.

GlutenFreeSami is named after my daughter, Samantha — the reason this journey started in the first place. What began as a necessity slowly turned into confidence, and eventually into a place where I could share what I’ve learned with others walking the same road.

About Celiac Disease

Celiac Disease is an autoimmune disorder. When someone with Celiac Disease eats gluten — a protein found in wheat, barley, and rye — the body treats it like an enemy. The immune system attacks the small intestine, damaging it over time and making it hard to absorb nutrients.

GlutenFreesami As a Whole

Gluten-free food wasn’t easy to find back then. There were no “free-from” aisles in grocery stores. No gluten-free menus at restaurants. The few foods I could find had to be mail-ordered, and they were expensive, dense, crumbly, or tasteless — sometimes all three.

The learning curve was steep, and the fear of making a mistake was constant.
But we learned. We adapted. And slowly, we built a gluten-free home that felt safe again.

Celiac Disease didn’t just change how we ate — it changed how we lived.

It changed:
