OUR STORY

About me

GlutenFreeSami began with a diagnosis we never expected — and a journey we never asked for, but grew into with strength, faith, and a lot of trial and error.

Our gluten-free life started in 2002, when my daughter Samantha was just seven years old. After years of stomach pain, fatigue, and unexplained illness, we finally received an answer: Celiac Disease.

I remember sitting in that doctor’s office, trying to process the words.
Celiac Disease. Autoimmune condition. Gluten. No cure. Lifelong diet.

I didn’t know what gluten was — I didn’t know where to start. Suddenly, I was reading every label, throwing away snacks, and googling ingredients I couldn’t pronounce.

It felt like the world got smaller overnight.

About Celiac Disease

Celiac Disease is an autoimmune disorder. When someone with Celiac Disease eats gluten — a protein found in wheat, barley, and rye — the body treats it like an enemy. The immune system attacks the small intestine, damaging it over time and making it hard to absorb nutrients.

GlutenFreesami As a Whole

Gluten-free food wasn’t easy to find back then. There were no “free-from” aisles in grocery stores. No gluten-free menus at restaurants. The few foods I could find had to be mail-ordered, and they were expensive, dense, crumbly, or tasteless — sometimes all three.

The learning curve was steep, and the fear of making a mistake was constant.
But we learned. We adapted. And slowly, we built a gluten-free home that felt safe again.

Celiac,Disease
From Diagnosis to Doing Life — One Day at a Time

Celiac Disease didn’t just change how we ate — it changed how we lived.

It changed:

  • The brands we bought
  • The restaurants we trusted
  • The birthday parties we attended
  • The conversations we had with teachers and friends
  • The snacks we packed “just in case”

It made Samantha brave.
It made me resourceful.
And it made our family stronger.

Even now — more than 20 years later — we’re still learning. There are always new products to try, new recipes to test, and new people to meet who are just beginning their own gluten-free journey.

That is why GlutenFreeSami exists.

It’s not about being a professional chef.
It’s about being a mom who learned how to cook again.

It’s not about being a medical expert.
It’s about being a family who learned how to live gluten-free — together.

If you are just starting out…
If you feel overwhelmed…
If you feel like crying in the grocery store aisle because you can’t find one loaf of bread your child can safely eat…

I want you to know this:
You are not alone.
We’ve been there. Truly.

And we’re here to walk through it with you.
