Ingredients

  • 1 lb lean ground beef

  • 1 large shallot or 1/2 small onion, chopped

  • 1 package taco seasoning – store bought or homemade

  • 1/2 cup salsa

  • 1-3/4 cups chicken broth

  • 1 cup white rice

  • 1 cup shredded sharp cheddar cheese

Directions

  • Heat a large skillet over medium-high heat. Add the ground beef and onion. Brown the beef until cooked through. Use a paper towel to soak up excess grease or drain in a colander and return the mixture to the skillet. Add the taco seasoning, salsa, and chicken broth. Stir to combine and bring the mixture to a boil.
